Are you ready for it? My all time favorite recipe?! I know I’m coming out the gates early with this one, but it’s too good not to share!!
#NAVchickensalad only has 6 ingredients!
I came up with this recipe because of my love for the homemade mayo, and needed a reason to use it! Instead of chopping up the celery, or other veggies, I decided to just use a bag of broccoli slaw I had on hand, and the rest is history!! Using the slaw, makes it that much simpler and faster to get to the table. The cashews add an awesome crunch, but use the nuts of your choice. Using a rotisserie chicken is also helpful, and makes it delish, just read your labels if you're on Whole30. You won’t miss the bread with this one, eating it with a fork, or licking the bowl, whatever you choose gets the job done! Enjoy!
NAV Chicken Salad (Serves 2)
2 cups of cooked chicken thighs/Compliant Rotisserie Chicken
2 cups of broccoli slaw
⅓ cup of homemade mayo
¼ cup Coconut Aminos
1/2 cup crushed cashews
Salt and Pepper to taste
Mix together in no specific order!
This name has my wedding monogram in it as a standing joke in our home. I make this so often that my husband is reluctant to ask what is for lunch, assuming Chicken Salad will be the response. Not that he doesn’t like it, but says he doesn’t want it everyday; so I decided to to name the salad a bit after him too! ;) Although I could eat this everyday and it also make a great cold lunch to go, (I keep the sauce (mayo/Coconut Aminos) together, separated from the salad till you’re ready to eat!)
